Southwestern BBQ pizza

Serves: 4-5
  • Salt, pepper
  • Garlic salt
  • Olive oil
  • BBQ sauce
  • 2 breasts skin-on, bone-in chicken, cubed
  • Scallions
  • Cheddar cheese
  • Mozzarella cheese
  • Corn
  • Black beans
  • 2 pizza crusts
Cook the chicken (seasoned with the salt, pepper and garlic salt) at 375 for about 45 minutes. Remove the skin, and cut the chicken off the bone. Cube the chicken; toss in BBQ sauce. Put a thin layer of sauce on the crusts, then top with mozzarella. Add corn, chicken, black beans and scallions. Add a little cheddar cheese. Bake according to crust directions.
*Chef’s note: Yummy! I use Rustic Crust (can be found at The Fresh Market, Whole Foods). Just play around with toppings to create something you love. This seems very simple, and it is, but, with the right flavor combinations, it doesn’t need to be super involved.
