Brown sugar pound cakes

Kitchen Trial and Error

Makes: 12 cupcakes

  • 1 1/2 cups all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 stick (1/2 cup) butter, softened
  • 1 cup + 2 tablespoons dark or light brown sugar
  • 2 eggs, room temperature
  • 6 tablespoons buttermilk

Preheat the oven to 325F and line muffin tins with paper liners. Cream butter and sugar together until light and fluffy. Add eggs, one a time, until incorporated. Mix in baking powder and salt. alternate adding flour and buttermilk until everything is incorporated. Fill muffin tins 3/4 full. Bake for 20-25 minutes or until a toothpick comes out clean. Cool in the tin for 10 minutes and then remove. Cool completely before glazing.

*Chef’s note: I totally enjoyed these little cupcakes. I am a brown sugar fanatic, but I think most of you sweets-eaters would like them as well. A very subtle butterscotch flavor (I used light brown sugar) and a moist-yet-dense texture like a true pound cake. Yum! This recipe calls for a glaze-like brown butter icing, which I think would be even more fabulous with this particular cake! I just had some of that ah-mazing chocolate fudge frosting from How Sweet It is left in my freezer to use up.  By the way, this cutest plate collection I often use is a design by the amazing Kay Wolfersperger!
